
This was the biggest hit during the christmas dinner. When I roasted it, top of the ham was crusted with roasted cashews. However, when carving it out, 1/3 of the cashews dropped off, 1/3 got stolen by Krys and her brother, leaving behind 1/3 on some of the slices!
Roast Ham
Ingredients:
- Ham shoulder
- Lime marmalade
- Brown sugar
- Dijon mustard
- 1 egg yolk
- Roasted honey cashews
Method:
- Preheat the oven to 160C.
- Combine marmalade, sugar, mustard and egg yolk in a bowl. Whisk it till smooth. Brush surface of ham with the mixture.
- Finely chop the cashews and mix it with the remaining marmalade mixture. Spread nut mixture on the top of the ham. Bake till cook.
Lime Mustard Marmalade
Ingredients:
- Lime marmalade
- Dijon mustard
- Pinch of salt and pepper
- 1 tbsp of orange juice
Method:
- Combine above ingredients together. Serve with the ham.
