

The recipe for the cake base is my green tea sponge cake and it’s layered with vanilla ice cream. So get yourself a good tub of ice cream, and create heaps of space in the freezer, and you are good to go!

Whether you believe it or not Hillary, this is my first time making a full chocolate border as a deco. You are gonna need a really long piece of non-stick baking paper and work really quickly so the chocolate does not set before you wrap it around the cake. Enjoy!

this is amazing! i was wondering how you did the border.. did you just wait for the chocolate to set like half way (room temp, fridge, freezer??) before you wrapped it around the cake?
thanks! sorry for the late reply. No…i spread the chocolate onto a baking parchment. allowed it to settle a little so it doesn’t drip all over when i lift it off, then immediately wrapped it around the cake. The coolness of the ice cream sets the chocolate almost immediately.

No I haven’t. The reason I used white chocolate is because the sweetness of the choc balances the bitterness of green tea. Try it and let me know!
